Month: July 2014
It’s Sunday, DAY 15 – Vegan-Vagan
SUNDAY MORNING
CHURCH – was my breakfast food! 🙂
I really didn’t have time to eat any breakfast but I got filled by the Spirit.
That was enough for me. 🙂
LUNCH:
Catfish Nuggets
Sweet potato fries
DINNER
Tuna Casserole topped w/French’s French Fried Onions
Baked Potato
14TH DAY – SATURDAY @ LUBY’S $2.29 EXTRA
BREAKFAST:
LUBY’S breakfast buffet: (SUCKS)
3 PANCAKES w/Sugar free syrup
(that’s all)
Never will I go to LUBY’S for breakfast ever again. First, I was served cold food… imagine that. My plate consisted of 3 pancakes, 1 small bowl of oatmeal, 1 small bowl of hash browns & 1 regular cup of coffee… which cost $2.29 extra. No, coffee was NOT included in the buffet price. AMAZING! Well needless to say, MY FOOD WAS COLD. Now you know the oatmeal is cold when butter doesn’t melt in it. And mind you, after walkong to my table, my $2.29 cup of coffee spilled in my plate of pancakes. So I never got a chance to eat or drink either one of them. You would think the waitress would have offered a refund after I adamantly declined any other service. I’ve concluded that LUBY’S is not compatible to the other famous breakfast entries. I will stick with DENNY’S, IHOP or CRACKER BARREL.

DID YOU KNOW? You can O.D. on fruit? According to Dr. Oz…
Dieters who say they eat fruits and veggies are more likely eating more fruits than veggies. A sneaky diet mistake is OVER DOSING on fruit. Dieters make these mistakes by eating less veggies and more fruits. All fruits aren’t created equally. Lots of fruit carry tones of fructose.
WHAT’S RECOMMENDED:
Stay away from dried fruit which are super high in calories.
EAT MORE – Low dose and low glycemic index fruit such as Raspberries, Blueberries, Pears, Apples, Strawberries.
NOW! I’m not saying that is what I am eating on my “VEGAN VAGAN” challenge… I’m just saying what Dr. Oz is saying!
I’m just say’n!

DAY 9 – Vegan Vagan & Holding on Strong!
It’s Monday 7/14/14, and I’m sick. My day was pretty rough. I wasn’t feeling well at all; and by not feeling well, I didn’t eat much. For instance, I had no breakfast. My tummy was killing me. I think I came across some bad mushrooms and my stomach didn’t take it well.
Here is My Meal Plan:
BREAKFAST:
Air Pudding
[as my aunt used to say when we were kids]
LUNCH:
Mixed Vegetables with Chicken and Shrimp, (2 shrimps to be exact). I ultimately picked out the Chicken, which was an enormous amount of and was left with only 2 pieces of shrimp. Restaurants are very skimpy with their seafood.
DINNER:
(Home Cooking): ^-^
Cod Fish sautéed in butter and onions
Sweet Potato French Fries
1- boiled egg, sliced and sprinkled with black pepper
I didn’t do so bad for today but let’s pray that I feel better tomorrow! 😉

The Big Day- Sunday’s Spaghetti Dinner X 2
Day 8th. Sunday’s Dinner was the focus of the day. I started my morning off right. My usual breakfast & lunch. There was no temptation for meat. But I could never get full.

RECIPE:
4-Bell peppers: RED, YELLOW, GREEN & YELLOW – chopped
1 -med Yellow Onion – chopped
1lb – Ground Beef
4 Link Sausages – sliced, chopped
In a large skillet, sautee sausage first. Five minutes. Then add ground beef. Season to taste. Drain meat, set and set aside. In the same skillet, sauté chopped vegetables, 2-3 mins. Add meat to veggies. Season to taste. Stir to blend evenly.
SAUCE:
2 jars of RAGU Sauces
1 small can of Tomato Sauce
Brown Sugar, added to taste
1 cup of water
salt, black pepper, garlic powder – season to taste
Italian Seasoning – season to taste
In a boiling pan, add all of the sauces bring to boil and season to taste. Stir constantly. Boil for about 20 mins on medium heat.
Add sauce to meat mixture, stir to blend
ADD INS:
3 Cheeses: Shredded Cheddar, Shredded Sharp, Shaved Parmesan Cheese: 1/2 cup each. Sprinkled over top.
Once the spaghetti is at a low boil, add cheeses.
Turn off heat, cover and allow cheese to melt.
BREAD: Crescent Rolls

For the MEATLESS meal plan, I used all the ingredients above except for ground beef & sausages. In replace of meat, I added sautéed mushrooms.
7th Day – It’s Saturday!
Oh my! It’s the wknd and I am wondering how I will make it thru. It’s Saturday morning and my sugar-mama daughter, meets me in the kitchen- unexpectantly! A good surprise! She has all of the ingredient for an all natural smoothie and I am loving it. Not only will this help and support my goal, I can eat some of her stuff too! 🙂 She went first. Mixing her all natural smoothie while I watched. (I am so proud of her) She is growing up to be a responsible adult.
Meanwhile, here was my meal plan for Saturday.

You would not believe this, but I could not pig out like I used to do at a buffet.
