I made this sandwich for my lunch! I call it “zucchini so good”.   My friends look at me special.  I can’t help it~!  It is very good.  The best sandwich ever!  Lettuce, tomato, slice cheese, purple onions, sprinkle of salt and paper and 1 serving size slice of raw zucchini, grilled.

My favorite sandwich yet!!

I know you maybe tired of hearing how awesome my dinner entrée was the night before but BUT… I gotta shout about it!

I just wish I would have started eating like this years ago!  No beef, no pork, no CHICKEN!!! Mannn… what’s that?  Life is so much better and healthier now without it!  I made this slamming dish last nite, it was so good, I got a standing at a distance Hi-Five from my husband!

“Fried Vegetables?”

I was on the phone with my darling Auntie last night and she has this not-so coy personality that seems to follow her sometimes.  She is sweet as pie but there is something that’s inside of her that makes her say things like,  “I’m having fried chicken wings for dinner tonight.  What about you?  Are You “frying vegetables? [he- he]…”  Gotta luv her, right?  I shared her ‘dry’ humor with my husband and we laughed and moved on.

Well Auntie!!  My so-called “Fried Veggies”  was amazing!  It truly amazes me on how spectacular dinner can be without meat!!

I was so proud of myself and the creativity my mind brings when it is time for dinner!

SHRIMP & TORTELLINI  over Broccoli Rice

I never made kabobs with cheese tortellini, shrimp, bell peppers and onion!  Great dinner!  and do you see the creamy mushroom gravy over the rice!  It was heavenly.

DAY 37 & I GOT TO CHANGE MY NAME!

My daughter, I refer to her as “Ms. Young Scholar”.  She had to take it upon herself to explain to me that definition of the “vegan”.  She says, “Mom, you are not a Vegan.  You are more like a Vegetarian.  Vegans don’t eat any food that comes from animal products… like milk, eggs, cheese.  You eat all of that!  So it’s better if you call yourself a vegetarian!”  Now who can argue with that?  Heck, I never took the time to “define” Vegan.  I just liked the name!  So I now have to change my name, my purpose.  My new name will be “Veggie Vagan”. How is that?  I like that.  So my journey from this day forward will be following the Veggie Vagan track.  I still have to makeup my own name… Heck I want to be like  Beyoncé.  If she can get Webster to officially grant her word, bootylicious in the dictionary, I can too!

“EAT FRESH~ER” – 32DAYS

This day will make 32 days of the most wonderful feasting on the planet!  I was a genius masterminding  last nite’s meal, with thoughts of “what’s for dinner?”  I came up with the blast of veggies, swiss cheese, olives, onions… just the works!!  I genuinely master minded this plan and went to the lovely “SUBWAY” Sandwich Shoppe and request their finest veggies on an Italian Herbs & Cheese on a foot long!  Ooo-lala!  BUT back it home… at home, waiting was the “Veggie Delight” mixture that  I quickly blended together.  Crab & Lobster meat seasoned with salt & pepper and lil bit of celery flakes.  [mouth watering yet?]

CHEERIOS? EVERYONE!

I need to be the #1 spokesperson for CHEERIOS!  WOW!  I was having a simple bowl of Cheerios for breakfast.  I was in the break room, minding my own “breakfast-business”, pouring milk into my bowl of Cheerios and before I could get out of the break room to get to my desk, to enjoy my simple bowl of CHEERIOS!!!  -somebody had something to say… about MY Cheerios!!  WTH??  It’s just a bowl of cereal people! OR not???   Maybe I need to rethink the importance of this bowl of Cheerios! Obviously!  Because not only 1 but 3 people engaged a conversation w/me about my cereal.  HOT DARN IT!!  I need to contact the headquarters of CHEERIOS and negotiate a darn commercial!!  why NOT?? Everybody else getting their 5 min of fame… I should too!  I just can’t believe how 1 bowl of CHEERIOS can cause such a chain reaction to everyone it comes in contact with.  Phrases like, “Cheerios for breakfast?”,  “Cereal, huh?”  or this statement, “Is that the good kind? You know they have a new one now, Cheerios – Protein!”

Again I say, WOW! I didn’t know how much of an effect a bowl of CHEERIOS has on Everyone!!!

30th DAY!!! Vegan-Vagan Explosion!

This is Day 30!  HEY! HEY! HEY!  I made it!  [pat me on the back]  I can say I finally made a commitment and stayed with it.

“Oh My Goodness”, (in my Shirley Temple voice when she was 5 or 6 yrs old)  It’s a good feeling.

My Highlight of the day was dinner!  I made these luscious homemade from scratch pancakes!  They were just too dainty and delicious!  Then I topped them with sliced bananas in its own Caramel sauce!  WHAT???  Yes!  I did DAT!

It was a DINNER EXPLOSION!  Breakfast is served.

I won’t be selfish and keep the recipe to myself!  I love to share!  SHARING is CARING !!!

 

PANCAKES:

1 C –  Flour   [ I used cake flour}

1  tsp – Baking powder

1/2 tsp-  Salt

2 Tbsp –  White sugar

3/4 C –  Milk  [I used 2%]

1 lg –  egg –  beaten

2 Tbsp  – butter,  melted

Directions:

  1. Beat egg until fluffy.
  2. Add milk and melted margarine.
  3. Add dry ingredients and mix well.
  4. Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
  5. The pan is hot enough when a drop of water breaks into several smaller balls which ‘dance’ around the pan.
  6. Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
  7. When bubbles appear on surface and begin to break, turn over and cook the other side.

BANANA CARAMEL SAUCE:

1 c.     Sugar

1/2 c    Water

2 tsp     Butter , room temp

3 tbsp.  heavy cream, warm

1 thinly sliced bananas

In a heated pan or skillet, add sugar.  Heat until melted, lightly browned.  Add water and stir, until a caramel brown color.  Add the melted butter and cream.  Stir and well blend.  Remove from heat.  Add sliced bananas.  Toss lightly in sauce until saturated.  Serve hot.
